All in the ovens with the recipes of our restaurateurs! #2

You've tidied your closets, read or reread all your books, made the children do their homework (courage) and vacuumed every nook and cranny. With all that, you're also starting to run out of recipe ideas and you miss the restaurant owners of Paris La Défense sorely?

In this period of confinement, they have thought of you by giving us some of their secrets, not too complicated, to reproduce at home.
So put on your apron and draw the wooden spoon: after the first delicious recipes from the restaurateurs in the area that you were able to try out last week, here are 3 new ones!

Rougail sausage, like Chez Zaz 

As you know, Chez Zaz is once again part of the 2020 fleet of Food Trucks of Paris La Défense. Normally, Chez Zaz offers tasty Breton cuisine, but this time it's a recipe for sausage rougail that the Food Truck is about to unveil to you! 

The ingredients (for 6 people)
4 home-made pork sausages
1 large Roscoff onion 
2 cloves of garlic
A quarter of West Indian pepper 
1 small can of tomato paste
1 teaspoon turmeric
1 teaspoon ginger
2 pinches of salt 
1 tablespoon of olive oil

You guys ready? 

Step 1: Preheat your oven and heat the sausages to 190° for 20 minutes.
Step 2: Mince the onion and crush the garlic cloves.
Step 3: Fry the onion and crushed garlic in a wok with the oil.
Step 4: Add the spices and chopped chilli pepper.
Step 5: Cut the sausages into slices and sauté for 5 minutes over high heat.
Step 6: Add the tomato paste and dilute with a glass of water as you go, add salt and pepper.
Step 7: Simmer over medium heat for 15 minutes. 

You can serve this recipe with rice or enjoy it in a buckwheat cake with a touch of grated Emmental cheese!
 

Club Sandwich, just like Octopus

If the recipe for sausage rougail is still a bit difficult for you, don't panic! Cooking can be simple without being any less tasty. For our greatest pleasure, Octopus, the modern brewery located within the Oxygen concept, proposes to make you discover the recipe of its club sandwich, perfect for an aperitif (virtual or not). We love it! 

The ingredients
Half a loaf of bread                                    
1 tin of sardines in oil                        
1 can 150 g of spreadable cheese (St Moret)
Half a yellow lemon        
50 g soft butter
Mustard

Let's go! 
Step 1: In a bowl, mix the drained sardines, cheese spread, a spoonful of mustard, butter and lemon juice.
Step 2: Toast 9 slices of sandwich bread
Step 3: Spread mixture on toast (2 out of 3 toasts)
Step 4: Shape the sandwich and cut the edges to make it even.
Step 5: Film and store in a cool place
Step 6: Before serving, cut the sandwich into 9 pieces and bake for a few minutes.

Confetti Cocktail like at Octopus 

Octopus is spoiling us this week by offering us a delicious vitamin cocktail to end the week, which goes very well with the club sandwich! Then a little drink? (we remind you that alcohol abuse is dangerous for your health, and should be consumed in moderation). 

The ingredients 
2.5 cl Campari
2 cl Gin
1.5 cl Grapefruit juice 
3 lines of Peychaud bitters      
Half a trench of grapefruit (for decoration)
 
You guys ready? 
Step 1: Pour directly into the glass: Campari, Gin, grapefruit juice and Peychaud bitters.
Step 2: Add 3 to 5 ice cubes and stir with a spoon.
Step 3: Decorate with a slice of grapefruit.
Step 4: Your Confetti Cocktail is ready!
